Spaghetti with Zucchini

Bring a large pot of water to a boil and add a pinch of salt. Stir in spaghetti and cook for 8 - 10 minutes, until al dente. While spaghetti is cooking, heat 1/3 cup olive oil in a large pan over medium-high heat and sauté garlic for 1 minute. Add zucchini and continue sautéing until zucchini is golden brown, about 8 minutes. Keep warm.

Drain spaghetti and toss with zucchini in the sauté pan. Season with salt and pepper to taste. Serve immediately topped with Parmesan cheese. Makes 3 servings.

1/2 packet (250 g.) spaghetti
1/3 cup extra virgin olive oil
3 garlic cloves, sliced thinly
4 medium zucchini, sliced thinly
freshly grated Parmesan cheese
salt and pepper
